| A guilt free birthday treat! |
Anyways, Callie & I teach together so we are always sharing things with each other... food, snacks, ideas, etc. Well this Friday is her birthday so I thought I'd whip up some of my energy bites for us. I was at HEB getting all the ingredients & I was going for the ground flax seed when lo & behold I discovered something amazing in the world of flax seed.
It's a Chia & Flax seed blend with Coconut & Cocoa (Fair Trade Certified). How can you ever go wrong with Coconut & Cocoa? Plus it's rich in Omega-3 Fatty Acids & Fiber. I looked into it after I bought it & they even suggest sprinkling it on hot cereals and yogurt, or in smoothies, puddings, pancakes, waffles and baked goods. So of course, I had to give it a try in my energy bites.
Somewhere in my thought process of making the energy bites, I had a wild & crazy idea to use sprinkles since it's Callie's birthday week! And I think they turned out pretty cute if you ask me. They taste really, really good, too! Make some & see for yourself!
Ingredients:
1 cup (dry) oatmeal (I used old-fashioned oats)
1/2 cup chia & flax seed blend*
1/2 cup peanut butter (I used organic)
1/2 cup cacao nibs
1/3 cup honey (local is best)
1 tsp pure vanilla extract
*If you don't have the blend, you can substitute it with 1/2 cup flax seed & 1 tbsp chia seeds.
Directions:
Stir all ingredients together in a medium bowl
Let chill for about 5-10 minutes in the fridge
Roll into balls of whatever size you like
Store in an airtight container & keep refrigerated for up to a week.
To add the sprinkles , (after you already have your bites made) pour a good amount of sprinkles into a bowl. Roll the bites in the sprinkles & use your fingers to press them in a bit.
I normally don't eat more than 2 in a day just to give you an idea of a normal portion. Try the recipe & let me know what you think! If anything, try the flax seed & chia seed blend. Hope you enjoy my Party Bites aka Energy Bites!
