You Get What You Pay For

Last Thursday night I went to the rodeo with my friends Sarah & Jen.

We planned on meeting at "park & ride" at 6:00 pm but I was still driving back from being in San Antonio with my family for Spring Break at 4:30 pm.  I kinda started to panic about time so I did that thing where you plan your outfit in your mind so that all you have to do when you get home is change & freshen up your makeup.  Once I got home, I had to unload my car.  It was loaded down with what I had originally taken to SA plus about four Target bags of unnecessary (but super cute) purchases. I knew I was on a time crunch & I have this unspoken rule that I will only make ONE trip no matter how many bags & things I have to juggle. My suitcase may have fallen over a few times & I may have lost circulation in my left arm, but I got it all in one trip! Side note: Sometimes when I get home from the store & my arms are loaded down with grocery bags, I just tell myself to think of it as a WOD (workout of the day) & I can't stop.  It actually works, you should try it!

Multi-tasking gets the best of me sometimes & I caught myself brushing my teeth while unpacking. I'm a little bit OCD so it was really, really, REALLY hard for me to drop my bags without unpacking anything.  Needless to say I made pretty good time but I had to throw my hair up into a messy bun.  Jen sent me this & I had to laugh!

Jen was trying to tell me she was the girl on the right & I was the girl on the left. Riiiiiight. If only we could all look like the girl on the left when it comes to messy buns! Made me laugh though that's for sure.

As I was driving to meet the girls, I was sent to about three different parking locations because Sarah & Jen decided that our first couple of options were not safe.  I was glad they were a little ahead of me so they could scope out the parking situation & make sure we parked somewhere safe & sound. I mean, that's what one could assume would be the outcome.  However, the parking location of choice was free.  Free. Aka enter at your own risk.  I pulled in & saw Jen waving happily to me to go park by her & Sarah, who was also smiling happily.  Did they see where we were? Where were we? Did we cross the border? Our dads would not be ok with this. I decided to do a quick, but super authoritative prayer before I got out of the car all the while nonchalantly smiling at the girls like everything was just so super. ;)

We made our way across the street (we were by a Jack in the Box if that also tells you something) to ride this thing called a Rail. It was like bus on a track.  And of course, we were one stop away from being the furthest from the rodeo.  Free parking though, right?!  The rail is an experience all on its own.  So much people watching, you can't help but stare.

Fast forward through the fried food goodness, the crowds, the rodeo, the awkward selfies I saw being taken that were too numerous to count & the concert, it was time to head back to the cars. I couldn't stop thinking about not wanting to go back to that parking lot.  If y'all could've seen how sketchy.  When we began our commute back to our cars, I literally almost asked about 3 policemen standing around if they would escort us to our cars. I even searched through my purse while we were on the rail for something that could look like a weapon & found some lip gloss that would potentially look pretty dangerous. (I was desperate.)

I made the girls discuss a quick plan of action for when we reached our stop: rush to our cars, get Jen's niece in first, then the stroller, then run to our respective vehicles & leave!

Oh, I forgot to mention that Jen's niece was with us!  Jen pushed a stroller the entire time.  Which, I'm not sure if anyone has ever had a stroller at the rodeo, but you get all kinds of special treatments with that thing.  It felt like Titanic with the "woman & children first" privilege.  I might take one with me next year just for that!

Anyway, back to the plan of action.  Sarah knew she was going straight for her car asap.  She suggested we all press our panic buttons & have our alarms go off when we arrived to our cars to scare anyone away.  I'm laughing about it now, but it seemed pretty logical at the time.  We didn't do it.

To speed this long rambling story up, since I know you are all on the edge of your seats, we got off the rail & immediately rushed to the cars across the street, past the Jack in the Crack and a few groups of people just chillin on the sidewalk.  I grabbed Jen's niece's backpack & put her in the car while Jen got the stroller in. Then we all made a mad dash for our cars pressing the lock buttons right away. But wouldn't ya know, I still had the dang back pack in my hand.  Haha! Figures. Who cares, we were in our cars safe & sound!

That night saved us each $20 in parking & made for one of the most memorable rodeo experiences to date.  I'm sure I'm being a little dramatic, but it was real y'all.  We legitimately parked in the ghetto.

I will gladly pay for everyone to park next time.  :)

Selfless Love

"And he died for all, that those who live should no longer live for themselves but for him who died for them & was raised again." 2 Corinthians 5:15

I have been reading a book by Tim Keller called "The Meaning of Marriage."  You don't have to be married to read it (obviously).  Actually, I think you should read it before you get married & then again while you are married.  Anyway, I just read a section in the book on selfishness that I think we can relate to married or not.

According to Keller, 2 Corinthians 5:15 says the essence of sin is living for ourselves, rather than for God and the people around us.  Jesus can sum up the entire will of God for our lives in the two greatest commandments: to love & live for God rather than ourselves and to love and put the needs of others ahead of our own. (Matthew 22:37-40)

We live in a world that makes it so easy for us to be self-centered.  It's an all about me mentality. How are you going to help me?  I think we can go a long time and not even stop once to think about anyone other than ourselves.  I don't wanna be like that.  I don't wanna be that person.  Or that friend. Or that sister. And no one wants to be around that person.

Something I have learned when it comes to doing things for others is that there's nothing that negates an act of kindness or thoughtfulness quicker than when you feel the other person expects something in return.  Can't we help others without expecting anything in return? No one should keep tabs of all the stuff they do for others.  Just be kind for the sake of being kind.  That's when Christ's love shines through us!

It's all about being intentional.  Making a conscious decision & effort to change.  To put the needs of others ahead of our own.  To live a selfless life.  Not thinking less of yourself or more of yourself, but thinking of yourself less.  It means taking your mind off of yourself & realizing that in Christ your needs are going to be met & you will have all that you need anyway.  I think when we look at it this way, we have nothing to lose!

This is something that I will challenge myself with going forward & I hope it encourages you to do the same.  There are so many opportunities for us to show selfless love toward others & we will see them when we look for them.

Party Bites aka Energy Bites

A guilt free birthday treat!
My friend Callie over at Fun and Sun Without the Buns and I like to share recipes & eat healthy as much as possible.  Every now & then we do splurge to maintain a lifestyle we are able to stick to.  But let's be real... queso.

Anyways, Callie & I teach together so we are always sharing things with each other... food, snacks, ideas, etc.  Well this Friday is her birthday so I thought I'd whip up some of my energy bites for us.  I was at HEB getting all the ingredients & I was going for the ground flax seed when lo & behold I discovered something amazing in the world of flax seed.
It's a Chia & Flax seed blend with Coconut & Cocoa (Fair Trade Certified).  How can you ever go wrong with Coconut & Cocoa?  Plus it's rich in Omega-3 Fatty Acids & Fiber.  I looked into it after I bought it & they even suggest sprinkling it on hot cereals and yogurt, or in smoothies, puddings, pancakes, waffles and baked goods.  So of course, I had to give it a try in my energy bites.

Somewhere in my thought process of making the energy bites, I had a wild & crazy idea to use sprinkles since it's Callie's birthday week! And I think they turned out pretty cute if you ask me.  They taste really, really good, too!  Make some & see for yourself!

Ingredients:
1 cup (dry) oatmeal (I used old-fashioned oats)
1/2 cup chia & flax seed blend*
1/2 cup peanut butter (I used organic)
1/2 cup cacao nibs
1/3 cup honey (local is best)
1 tsp pure vanilla extract

*If you don't have the blend, you can substitute it with 1/2 cup flax seed & 1 tbsp chia seeds.

Directions:
Stir all ingredients together in a medium bowl
Let chill for about 5-10 minutes in the fridge
Roll into balls of whatever size you like
Store in an airtight container & keep refrigerated for up to a week.

To add the sprinkles , (after you already have your bites made) pour a good amount of sprinkles into a bowl. Roll the bites in the sprinkles & use your fingers to press them in a bit.

I normally don't eat more than 2 in a day just to give you an idea of a normal portion. Try the recipe & let me know what you think! If anything, try the flax seed & chia seed blend.  Hope you enjoy my Party Bites aka Energy Bites!

Vanessa

Back again!

Hey everyone!

So a few months ago, I realized my original blog was gone.  I mean really gone.  I can't even get it back from the "archives" as they say.  Long story short, I was using Word Press & they charge a membership of some sort.  And I knew that getting into it, but I forgot to let them know I lost my debit card (nothing new there) and that my card number needed to be updated.  A few months had gone by until I realized this unfortunate information.  I mean let's be real, when school is in full swing & you're helping run a family business, the blog gets kicked to the curb.  Hence the fact that I didn't even notice it had vanished until it was too late.

When I finally realized I couldn't pull up my old blog,  I called the good ol' tech people of Word Press. This nice young man made me very aware that they had apparently tried to notify me "several times" that my account info needed an update.  I wish I had paid attention to those darn emails.  Truth be told, I went back to look & they had in fact contacted me a few times.  But when you have over 10K emails, things get missed.  Lesson learned the hard way.  So now, all my blog posts... ALL. OF. THEM. are gone.  No where to be found ever again.  ((tear))

Moving right along....

So now here I am with a FREE blog (thank you blogger) & I will never have to worry about losing my posts again due to a lost debit card.  I've spent hours trying to figure this whole blog theme out.  I want it to look cute but good gracious HTML codes are the worst to figure out on your own! Literally took me 2 hours to get my photo as a circle y'all.  Not even kidding.  Circle photos are under appreciated I'll tell ya that right now.

Anyway,  I'm not sure I need another thing added to my schedule (like writing blog posts), but I'm excited about it & I'm gonna give this thing a better shot!  Let me know if there's anything you'd like to read about & I'd be happy to give you my take on it.

xoxo,
Vanessa
